Slow Cooker Salsa Chicken

This is a wintertime favorite and a recipe I use especially when I am working away from my home office.

We have a crazy couple of weeks coming up so I may use it for burritos in the not so distant future.



It is SO easy and delicious and versatile... serve it in tortillas with cheese for the kids, on rice or on top of greens for a yummy salad!



4 frozen chicken breasts

1 container of fresh salsa (12 ounce container)

1 beer (any kind)



Place ingredients in the slow cooker. I usually turn it on high while I am getting everyone out the door to school (about 40 mins) then I turn it to low for the rest of the day.



When I get home, I pull the breasts out and shred them (just pull them apart). I make burritos or a salad or just add them to rice.



Easy and Yummy!

Beer and salsa with chicken. Can't go wrong. Oh wait, and it's in the slow cooker. How could it get any better?

Great idea!

I've made chicken breasts in the crockpot, with salsa, great for tacos, etc. Never thought of adding beer though... will try it next time.

Pork chops would be good too..

I love recipes for my slow cooker. When you are a busy mommy it makes life so much easier to throw in some ingredients and go!

I've never seen a recipe like this one for a crock pot. Do you think sprite would work instead of the beer?

Guess what is simmering in my crock pot right now! Yep. That's right. Your slow cooker chicken, with these little tweeks:

added minced garlic
added chopped tomatoes
added cilantro
added chopped onion

Mainly, cuz I need to use the tomato and onion that have been looking for a new home.

I love that that the chicken can be popped in right from the freezer.

OMgosh this was so easy and yummy. We shredded the chicken and made tostadas with it. I have so much left over, I put some in the freezer for later and leftovers tonight will become a yummy salad. Thanks again for this recipe. I will never make chicken for tacos etc any other way now!

We do a variation on this and love it! Add black beans, and then during the last 30 minutes add cream cheese. YUM. But we never put the beer in it - I'll have to try that. Does it just make the meat more tender?
